Here's a recipe for a "S" themed dish: Spinach Stuffed Sweet Potatoes
Ingredients:
- 4 medium Sweet Potatoes
- 2 cups fresh Spinach, chopped
- 1/2 cup Sharp Cheddar Cheese, grated
- 1/4 cup Sour Cream
- 2 Scallions, sliced
- Salt and Pepper to taste
- 1 tbsp. Olive Oil (not starting with "S" for variety)
Instructions:
1. Preheat the oven to 400ยฐF (200ยฐC).
2. Pierce sweet potatoes with a fork, and bake for 45-60 minutes until tender.
3. In a skillet, sautรฉ spinach in olive oil until wilted. Season with salt and pepper.
4. Once sweet potatoes are cool enough to handle, slice them open and scoop out some of the flesh to create a boat.
5. Mix the scooped sweet potato with the sautรฉed spinach, grated cheese, sour cream, and half of the scallions.
6. Stuff the mixture back into the sweet potato boats.
7. Return to the oven for 10-15 minutes until the cheese is melted and bubbly.
8. Garnish with remaining scallions. Serve warm. Enjoy your "S" sensational dish!
